Happy Groundhog Day!

Today as families traditionally sit down to a table set with delicious roasted groundhog or groundhog stew, with all the fixin's, don't forget to thank the groundhog for his weather-forecasting abilities, which are never wrong. Or something like that.

What's YOUR favorite groundhog recipe?

  1. Best I ever had was braised in El Toro tequila, in its terroir, over a smoldering campfire.

    It most important that one consume most of the tequila prior to preparation. (I like to cook in the canteen cup I drank from, adds character to the stew, I think...a touch of personality).

    Also, it is best if all of the fur is removed.

    This recipe works well with raccoons, muskrats, carp, possum, and in a pinch, mice.

    If pigeon or blackbird is used-pluck before consuming the tequila! Very important.

    Also, whiskey can be substituted for the tequila, but it's much more important to get all the fur off in that case.
